Wafer Biscuit Ingredients

      In the process of  wafer production line, the ingredients  will determine the wafr's taste directly. So what ingredients should you prepare? As a controller or leader, you should know that  methods about processing.

Flour – it is generally considered for you that wheat flour from almost other source can be used for basic wafer manufacture although usual preference. Wafers produced is a very specific process, your decision will determine what you can outcome. On the other hand require rigid specifications.In many countries, flour production is controlled by the local government, therefore, the cost of imports  wheat or flour will be improved. So weak flour is often used to make waffles. Strong powder, as will be used for bread and hard wafer production.

Starch it is very common to see that some recipes where starch be added. The protein strength in the flour remains the same and therefore is not diluted although the amount or quantity is reduced. Add the starch, flour protein strength will be not unchanged, will not be diluted or reduced. 

Egg –the essentionl for making wafer bsicuit. If eggs are used in wafer, it is most often mixed with egg yolk, in addition to maintain the percentage of protein it contains, but also reduce the negative effects of lecithin.

Sugar –is mainly used to adjust the color and flavor. But in the use of the process, must be adequate, if used in excess, the requirement for frequent plate cleaning deposits can lead to stick to the board.
 
Salt –is used as a flavor enhancer. If used in excess, it may have a low solids broken convergence effect. However, the taste will deteriorate.
 
Yeast –food production process is essential. In addition to the dominant position of cream filling and chocolate coating will cover up rather than supplement any desired subtle flavor from fermentation. Hot activate yeast to encourage the formation of gluten, which needs to be avoided.
